Genesis 1:29-30 Then God said, “Behold, I have given you every plant yielding seed that is on the surface of all the earth, and every tree which has fruit yielding seed; it shall be food for you; and to every beast of the earth and to every bird of the sky and to every thing that moves on the earth which has life, I have given every green plant for food”; and it was so.
Recently my friend gave me a zucchini. It was huge!! I’d be making zucchini muffins until they came out my ears!! I usually make Salsa and thought maybe there’s a recipe for Salsa Verde using zucchini.
Of course there is!! It’s like Google read my mind, or listened to me as I said it to myself. I looked through five or six recipes and picked one that was similar to my regular salsa recipe decided to give it a try.
I bought a dozen or so jalapeños,
a couple heads of garlic,
and four large onions.
I rough chopped the jalapeños and put them in the blender with the garlic. I also added a couple cubanelle peppers and a dozen mini-sweet peppers that I had on hand. I added the juice of five lemons for about 1-cup of juice.
I puréed the mixture and added all to my large kettle. Then added 2-tablespoons of salt and began to slowly cook the Salsa Verde.
After simmering for about an hour, I remembered a Salsa Verde that I’d had once with tomatoes so I added one-large can of diced tomatoes.
One recipe I reviewed used 6-10 large green tomatoes, but I didn’t have any and decided the red would be fine. Some of the recipes called for tomatillos, but my store didn’t have any the day I shopped.
While the Salsa Verde cooked down, I prepared my jars. I thought I’d probably have 6-8 pints so I used both pints and half-pints.
I ended up with 9 1/2 pints of salsa. It’s not bright green because of the tomatoes, but it’s hot and yummy!!
Snack time!! The Salsa Verde was delicious!! I think I’ve found the best use for zucchini yet!!
