The Christmas Cookies

Matthew 6:11  Give us this day our daily bread.

Gingerbreadmen Patients and the Doc

In a large mixing bowl, cream together:

1/2 cup shortening

1/2 cup sugar

Add:

1/2 cup molasses

1 egg

1 tablespoon vinegar

Sift together and add to creamed mixture:

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 teaspoons ginger

1 teaspoon cinnamon

1/2 teaspoon cloves

Blend dry ingredients until combined well.  Divide into two or three balls of dough, cover and chill for three hours or until easy to handle.

Lightly grease a cookie sheet and set aside.  On a lightly floured surface, roll half of the dough out at a time to about 1/4″ thick.  Using a gingerbreadman cookie cutter, cut into desired shapes.  Place about 1″ apart on the prepared cookie sheet.

Bake at 350 for 5 – 7 minutes depending on thickness of the cookies.  Cool on cookie sheet for a minute before transferring to a cooling rack.

Icing Frosting

2 cups confectioners sugar

1-2 tablespoons milk

1 teaspoon vanilla

Mix well and to a consistency that will hold its shape to decorate cookies.

Using a pastry bag, decorate half the cookies as patients with a nose bump and bandage and the other half as the doc with a headlamp.
