Grilled Peaches

Today when I arrived at the log home, the countertop had been installed along with the faucet.

They had just finished the tile in the laundry area.

Abby’s shower arrived and she and Mae moved her dresser in.

Lunch time. On the menu today, BBQ Chicken, Coleslaw and Grilled Peaches. Doesn’t it look delicious on the new countertop?

Next on the schedule, tiling the utility room down cellar so the heat pump can be installed. Maverick showed me the way down. I hadn’t gotten pictures of the stairs yet. During the winter sometime, they had the Amish guy that did the trusses and the roof, come back and build the stairs.

I asked about the floor trusses. The first time I had been to the house, the foundation had been laid. The next time I went, they had already started working on the logs. I was thinking maybe they had the Amish do them, but R&M did them way back in September or October.

Resting a couple minutes. Another productive day.

Lately I’ve seen a few different recipes for grilled peaches. I thought they’d be a nice side dish to go with BBQ Chicken and Coleslaw today.

I saved the pits, maybe I’ll try growing a peach tree.

Grilled Peaches

Ingredients

  • 2 large peaches or 4 small
  • 2 tablespoons unsalted butter melted
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon ground nutmeg

Instructions 

  • In a small bowl combine brown sugar, cinnamon, ginger, and nutmeg. Set aside.
  • Cut the peaches into quarters and remove the pit. For small peaches, cut into halves.
  • Brush the butter over the cut sides of the peaches.
  • Preheat the grill or grill pan over medium heat. Make sure to clean the grill grates and grease with vegetable oil.
  • Once the grill is hot, place the peaches cut side down and cook until grill marks are achieved, about 2 minutes. Grill the other cut side of the peach for 2 minutes.
  • Flip the peaches over and sprinkle the surface with the brown sugar-spice mixture. Drizzle some of the melted butter on top to help melt the sugar.
  • Cook until the sugar turns into a glaze and the peaches are soft, about 2 minutes. If desired, sprinkle on more brown sugar topping.
  • Transfer peaches to a serving dish as a side dish or enjoy with a scoop of ice cream, or even serve with a salad.
