Where’s Stanley?


There’s always that one employee that arrives on time, stays late and goes the extra mile. She’s the one you can depend on to meet the deadline. He is trustworthy and loyal. He pays attention to details. She keeps everything organized.

She doesn’t gossip or scroll Facebook. He can fix your desk or kill a spider. These guys are valuable members of the team.

So is Stanley.

Today when I arrived insulation had been put in the inside walls.

A friend stopped by with her new dog Molly.

On the menu today, Boiled Dinner and Brookies. Ash pretty much had just cabbage.

Grammie stopped by and suggested the boys make cribbage boards from the scrap wood. Ash asked Siri for a picture of a cribbage board.

A couple years ago I was watching Aust and he wanted Domino’s pizza and brownies. Fast forward to the lunches at the log home and every once in a while Aust will guess what the dessert under the foil might be. A couple times his guesses were the Domino’s brownies. I googled them. They have a name, Brookies.

What’s a Brookie? As I understand it, that’s what they call these copycats. Part Brownies and part cookie equals a Brookie.

Domino’s Copycat Brownies

Ingredients***

For Cookie Layer:

  • ¼ cup butter, softened
  • ¼ cup sugar
  • ¼ cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • ¾ cup flour
  • ¼ tsp baking soda
  • ⅛ tsp salt
  • ½ cup semi-sweet chocolate chips

For Brownie Layer:

  • ¼ cup butter, melted
  • ½ cup sugar
  • 1 egg
  • 2 tsp vanilla extract
  • ¼ cup flour
  • ¼ cup unsweetened cocoa powder
  • ⅛ tsp salt
  • ⅛ tsp baking powder

Instructions

  1. Pre-heat the oven to 350 degrees and spray an 8×8 baking pan with baking spray.
  2. ***Decide on size, I doubled the recipe.

Cookie Layer:

  1. In the stand mixer, cream together the butter, sugar, and brown sugar until light and fluffy.
  2. At low speed, add in the egg, vanilla extract until smooth.
  3. Add the flour, baking soda, and salt on low speed until just combined, then fold in the chocolate chips.
  4. Freeze the cookie dough while making the brownie batter.

Brownie Layer:

  1. Whisk together the butter, sugar, egg, and vanilla extract until smooth.
  2. Whisk in the flour, cocoa powder, salt, and baking powder until just combined.
  3. Pour brownie batter into the baking dish.
  4. Remove cookie dough from fridge and roll into 9 balls, then place into the baking dish.
  5. Bake for 25 to 30 minutes.
  6. Cool before slicing.

Yummy!! They were a hit. I asked Aust if I should keep them in the dessert recipe rotation and he said yes.
