Meatballs with a Side of Ravioli

Another beautiful day for working at the house. It was about 30° and sunny. When I arrived Aust was kayaking. I saw a couple geese near the shore.


The other window finally arrived. If you have been following the blog, you might remember that the log home kit company sent two left-side windows. They had to order another one and it took three or four months to get it. On the agenda today was to put the window in.

First though, putting up mildew resistant sheet rock in the kitchen area and cutting for a couple outlets.

On the menu today was ravioli, garlic bread and sugar cookies. I made meatballs for the sauce since a certain someone only seems to like meatballs. I planned to shape the cookies like Easter eggs, but most were round, maybe like goose eggs.

One more section of sheet rock going up in the daycare bathroom.

Clue number twelve.

It feels warmer already!! What a difference a window makes!!

Aust again ending the day the same way he started it.


Sugar Cookies

1/2 cup butter, softened

1/2 cup shortening

1 cup sugar

1 large egg

1 teaspoon vanilla extract (I used 2, if one is good, two must be better!!)

2-1/4 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Additional sugar for rolling

Directions

  • Preheat oven to 350°. Cream butter, shortening and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into creamed mixture.
  • Shape into 1” balls. Roll in additional sugar. Place on greased baking sheets; flatten with a glass. Bake until set, 10-12 minutes. Remove to wire racks to cool.
